2 big cardamom

2 – jaiptri

2 bay leaves

1 teaspoon cumin

2 tsp coriander powder

1 tsp turmeric powder

1 tsp degi chili powder

1/2 tsp Kashmiri red chili powder

1 tsp garam masala

150 ml oil (as much as a cup of tea)

Mix all the ingredients with the mutton

Transfer the mixture in a pot and close the pot with heavy plate

Keep the pot on medium hot flame for about 30 – 40 minutes.

Keep steering the mutton at regular intervals of 4 – 5 minutes so that it does not stick to the bottom of the pot

Add little water to the mutton mixture if it turns too thick and keep stiring

After 40 minutes, check the taste, adjust seasoning and finally check if the mutton stew has given out the red coloured oil.

The stew is finished when the meat is very tender, tasty and the flavour is intense

Spread chopped coriander leaves on mutton stew and allow the pot to cool for about 5 – 8 minutes

Serve the mutton stew with onion rings, and hot rice or bread or naan.
